Ingredients
- 3 pieces boneless chicken breasts - or rotisserie chicken
- 1 can cream of chicken soup - 10.75 oz
- 1 can diced tomatoes with green chilis - 10 oz Rotel
- 1 clove garlic - minced
- ¾ cup white onion - diced small
- 1 tablespoon butter
- 8 oz velveeta cheese - cubed
- 8 ounces spaghetti - cooked and drained
- Salt and pepper, to taste
Instructions
Preheat the oven to 350 degrees Fahrenheit (170 degrees Celsius).
Heat a tablespoon of olive oil or butter in a large skillet over medium heat and cook the chopped onion and garlic until softened (around 4 minutes).
Add the cubed chicken to the skillet and cook for 6 - 7 minutes until it's browned and no longer pink.
Stir in the chicken soup, cubed Velveeta, and diced tomatoes with green chilies.
Reduce the heat to a simmer and stir the ingredients until the cheese has melted and the sauce becomes smooth and silky.
Add the cooked spaghetti and season with salt and pepper to taste.
Transfer everything to a baking dish and bake in the preheated oven for 30 minutes.
Remove from the oven and allow to cool for 5 minutes before serving.
