This year I will be spending Valentine’s Day all alone…well, not totally alone. I plan on hanging out with a bottle of wine and some kind of sugary box of chocolates I pick out for myself. I will also probably watch Sweet Home Alabama about 3 times (while reciting all the lines back at the screen…with a heavier accent for each glass of wine I drink) and then fall asleep on the couch around 9pm.

If you are thinking of putting me on suicide watch, please don’t worry — I am actually looking forward to my plans. Sweet Home Alabama is one of my favorite all time movies, wine is awesome, and chocolate is pretty much wine’s best friend. It’s going to be an awesome Valentine’s Day.

Jorge will be out of town for work that week, so I figured what better way to celebrate? But I really am sad that we won’t get to do ourtraditionalV-day stealth Target shopping triptogether. Maybe we can do it on Friday when he gets back…and hey, then everything will be 75% off! Yay, for more candy!

You all know that while Jorge and I don’t celebrate V-day in the traditional way, I do love sweet treats that are V-day inspired.

So for this Valentine’s Day, I didn’t want to disappoint you guys and not provide something overly sweet. Because let’s be honest, Valentine’s Day is the first time since Christmas that it is perfectly acceptable (and expected) for us to pig out on Sugar. Thank god for the holidays! ;)

These little darlings take a few steps to make, but really are not difficult. Plus, if you have kids, I am sure they would have a blast getting to crumble up the cake and sprinkle on the little hearts!

Red Velvet Cake Truffles

Ingredients

Red Velvet Cake

  • 1 ¼ cups all-purpose flour
  • ¾ cup Dixie Crystals Extra Fine Granulated Sugar
  • ½ teaspoon baking soda
  • 2 teaspoons cocoa powder
  • ½ teaspoon salt
  • 1 large egg
  • ¾ cup vegetable oil
  • ½ cup buttermilk
  • 1 tablespoon red food coloring
  • ½ teaspoon vanilla extract
  • ½ teaspoon white distilled vinegar

Cream Cheese Frosting

Truffle Finish

  • 1 package (16 oz) bakers white chocolate
  • sprinkles, optional

Instructions

  • Preheat oven to 350°F. Grease a 9 X 13-inch cake pan.

  • Sift together flour, sugar, baking soda, cocoa powder and salt into a medium bowl.

  • Beat egg, vegetable oil, buttermilk, food coloring, vanilla, and vinegar in a large bowl until well combined. Add dry ingredients and stir until smooth.

  • Pour batter into prepared cake pan. Bake until a toothpick inserted in center comes out clean, about 18 to 20 minutes. Transfer to a wire racks and let cool completely.

  • Prepare cream cheese frosting. Using a rubber spatula combine soft cream cheese with powdered sugar. Avoid mixing vigorously as it will make frosting runny. Add softened butter followed by vanilla.

  • In a large bowl, use your hands to crumble cake into small crumbs. Spoon 1/2 cup cream cheese frosting into bowl and stir until mixture is well-combined.

  • Using 1 tablespoon of dough, roll dough between your palms until round like a ball. Place on a baking sheet covered with parchment paper, and refrigerate for 1 hour.

  • Place bakers white chocolate in a microwave-safe bowl and microwave it until melted, stirring every 45 seconds to prevent overheating.

  • Using a fork, submerge a cake ball in the melted candy coating. Replace dipped truffle on baking sheet covered with parchment paper. If desired, top each truffle with sprinkles. Repeat with remaining cake balls.

  • Refrigerate truffles to set coating, about 15 minutes. Truffles are best served at room temperature, but must be stored in refrigerator in an airtight container.
